Colleges and Universities join growing list of food service accounts replacing excess fats in favorite menu items with Z Trim.

MUNDELEIN, Ill.--(BUSINESS WIRE)--Recent sales of Z Trim products to Ball State University and Ohio University signal the launch of Z Trim Holdings, Inc. (Amex:ZTM - News), into the College and University food service sub-sector.

The purchase this week of Z Trim's Mayo Spread by the food service operations at Ball State University in Muncie, Indiana, as well sales of the Z Trim gel natural specialty fiber food ingredient direct from Z Trim Holdings to Ohio University in Athens, Ohio, indicate a food service expansion for Z Trim Holdings beyond the national news stories that broke earlier this year when K-12 school cafeterias began using Z Trim as a solution that could satisfy both the taste and lower fat profiles sought by dietitians and food service directors in the USDA's school meals program.

"Being a chef I have a difficult time finding cutting edge nutritional products that actually taste good," said Lucas Miller of Ball State University. "Items made by Z Trim are both nutritionally sound and taste amazing, a difficult combination to find," he said. "At Ball State University we look very hard for products that will both benefit our students nutritionally and meet their expectations for taste. By adding Z Trim products like mayonnaise with reduced fat levels, we are able to meet both needs."

Ball State will use the Z Trim Mayo Spread on sandwiches as well as in cold salads such as cole slaw and chicken, tuna and egg salad.

At Ohio University, Executive Chef Matt Rapposelli intends to put the highly versatile Z Trim gel specialty ingredient to the test across several food categories. "I'm impressed with this product and I have quite a few ideas I would like to use the gel for, but our immediate use will be a line of low fat muffins and some other baked goods," he said. "I foresee that we will be branching into dressings and some soup applications in the near future."

The next steps in bringing Z Trim to the masses include many players, according to Phil Versten, Director of Marketing and Communications for Z Trim. "Z Trim and Z Trim wellness foods have been successfully implemented in both school and now college and university food service markets," he said. "Interest across the food service universe is expanding and we're talking to several food service distributors, private labelers, and brand name manufacturers as a result of that growing interest," he said.

"We look forward to servicing this market because of its tremendous energy and innovative thinking in regard to nutrition," Versten added. "I envision getting involved in professional associations such as NACUFS, the National Association of College & University Food Service, in order to work more closely with the people that are changing the face of food service nutrition."

USDA-developed Z Trim is a natural non-caloric functional food ingredient that can lower calories from fat up to 80% in foods while maintaining superior taste and mouthfeel. Z Trim provides the texture of fats without the calories and can substantially reduce harmful trans fats, saturated fats, and cholesterol, and contribute to a healthy diet. Z Trim was recognized as the "Most Innovative Ingredient" at the 2006 the Food Ingredients South America's (FISA) International Exhibition for Solution and Technology for the Food Industry conference.

Z Trim is used to reduce fats and maintain moisture for the dairy, bakery, meat and poultry, and sauces and dressings industries, as well as in schools participating in the nation's School Meals Program. It can make meats juicier, baked goods moister, and dips creamier. Z Trim food technology provides a natural solution to global challenges of obesity and associated health problems.
