Does Z-Trim® need shear for all applications?

Yes and No, depending on the application.  Shear is needed for dairy, dressing, and sauce applications. Shear is not needed for meat and bakery applications.

What is the water holding capacity of Z-Trim® products?

Z-Trim® corn holds 25-30 times its weight in water.   Z-Trim® oat holds 9-11 times its weight in water.

Does Z-Trim® withstand extreme processing conditions?

Yes, Z-Trim® is stable across a wide range of pH and temperatures. From retort to pasteurization to high acid as well as freeze thaw conditions Z-Trim® performs consistently.

What is the total dietary fiber count of Z-Trim®?

Z-Trim®'s total dietary fiber content is 88-92%.
