When we first
began talking to Birds Eye's vice president of research and development
as part of a third party innovation exchange, we hoped we could help
them to formulate using Z Trim - for stability, water control, fat
replacement, emulsification, and so on. We didn't know we would end up
being invited into a world of "Alpha Chefs" where the peaks
of creative intensity soared.
That's the world
of Senior Corporate Research and Development Chef Steven Padley, whom
we met soon after introducing ourselves to Birds Eye's VP of Research
and Development, Laurie Smith. Chef Steve invited our Director of
R&D, Lynda Carroll, to attend a meeting of the Alpha Chefs, where
she benefitted from and participated in presentations on a host of
innovative offerings from the research chefs of various food companies,
working across food categories.
"The Alpha
Chefs are an innovation exchange just for chefs," Lynda said,
"so in those gatherings they are able to concentrate more
specifically on advanced issues concerning taste and functionality.
"They're a
very lively group," she said, "the cream of the crop. They
work hard but they also know how to have fun."
Chef Steve
appreciates the outcome of the experience as well. "After being
introduced to the people of Z Trim, I have found a wonderful new
product that has afforded me the ability to formulate everything from
sauces to breads with vastly
improved functionality, flavor and versatility,"
he said. "Being a frozen foods company, we are always concerned
with how new 'out of the box' products will perform in the frozen
segment, and Z-Trim has been a great new addition to our arsenal."
