Incorporating Z-Trim® Into Your Formulations and ProcessingIn most cases, no process changes are required when using Z-Trim® ingredients in finished products. In some applications, particularly where the primary purpose of Z-Trim® is to impart functional benefits other than fat reduction, Z-Trim® powder is simply blended with all of the other dry ingredients and neither formulation nor processing procedures need to be changed. Coatings, dough, and cookies are examples where high shear is not required at all.
In applications where high shear is required to impart the functionality of Z-Trim®, the standard process used in pilot plant or full-scale production for a given product application provides enough shear to hydrate Z-Trim properly. Homogenization, extrusion, and use of colloid mills all provide sufficient shear to hydrate and activate Z-Trim powders for proper and effective functionality. Since Z-Trim powders readily disperse in liquids at low and high temperatures across a wide pH range, no special preparation is necessary prior to the part of the process that uses high shear. Following are some examples: • Sour cream, Yogurt, Cream Cheese – the milk base containing the dry ingredients (including Z-Trim® powder) normally undergoes homogenization, which provides the high shear needed to impart the functionalities of Z-Trim® in these applications (smooth texture and mouthfeel, emulsion stability, and syneresis control). It is not necessary to prepare a Z-Trim® gel first; simply blend the dry powder with the other dry ingredients and proceed as normal.
• Salad Dressings and Mayonnaise – the standard process used in pilot plant or full-scale production of these products normally uses a colloid mill, which provides enough shear to hydrate Z-Trim® properly. It is not necessary to prepare a Z-Trim® gel first; simply blend the dry powder with the other dry ingredients and proceed as normal. • Salty Snacks and other Extruded Products – the extrusion process provides adequate shear and therefore Z-Trim® powder should simply be blended with the other dry ingredients.
For benchtop development and assessment, where typical processing equipment may not be available, the use of a Waring blender or some other high shear benchtop tool can deliver the attributes of Z-Trim® ingredients for effective evaluation.
